I know I know

Well its been a while since I've posted. I know I get bored so easily and to me my life changes so quickly, but I'm sure to everyone else it doesn't change very much.

Since the last time I posted my husband accepted and is now working as government contractor in Afghanistan. Not the dream job I was hoping he would get but he's working and making good money. I finally graduated from college. I officially have of bachelors of arts degree from Texas A&M University. I am so excited. I am looking for a job. The husband says he could care less if I had a job or not, but honestly I really don't see a reason to stay home. Elijah is almost 11. He ignores me until he wants something when I am home. Half of the time we will do something together for 30 minutes or so and then we are back in separate rooms. We don't talk much to each other. So me working would force him to be a little more independent and I can put him in an after school program of some sort. I think he would enjoy that. My job search is getting frustrating I know God has a plan as long as I keep doing my part God will bless me with a job.

I am still couponing, but not as much as I used to. The main reason is because my husband is gone and its just me and Elijah. I really don't need to stock pile anything. I have more than enough food. Also since Bud's gone I've lost the motivation to cook so most of our meals are quick and kid friendly. Not too much processed food, but its thrown together and kid approved. Also I have been requiring Elijah to cook once a week. Last week's dish was not so good. He followed the recipe correctly I thought the food was just gross. He thought it was awesome, but I didn't care for it. Its funny though since he's been cooking he pays attention to how many ingredients a recipe has, prep time, and total time. I've noticed he goes for 10 ingredients or less, 15 minutes or less prep time and 30 minutes or less total cooking time. Its so much fun watching him go through a cookbook and shake his head and say, " this was one has too many ingredients, this one takes 45 minutes".

I am not entering sweepstakes that much anymore either. I don't know why I just kind of stopped. I was winning here and there. The most I won was a $50.00 gift card and some movie tickets but nothing that made entering contests seem worth while. It was more something to past my time.

To past the time now I am doing Flylady and trying to organize my house because I am planning on moving to Florida when my son gets out of school. Its weird in the fact I have not lived in the same city as my family in 10 years, the same state as my family in 9 years. My son has spent most of his 10 years in Texas. Part of the reason for the move is that I see my step daughter and she has most of her mom's side of the family around attending soccer games, recitals, and just spending holiday's with them. My husband's nephews (are they my nephews too) spend time with both sets of their grandparents. My son spends time with pretty much me. I am the only person at his football games (my husband went to the ones he could go to), I am the only one at his basketball games. In 2008 my ex-husband lost his father his mother passed in 2000 and my parents are the only grandparents he has left. I just feel like he needs to get to know the family.

Its getting late. I will try not to laze out on the blog. And maybe even post some pictures. I can dream right. Speaking of pictures I need to take some of myself. I hardly have any of just me.

Vegetable Beef Soup

1c leftover beef roast
6c beef broth
1pkg 10 oz frozen mixed vegetables
1 can diced tomatoes, undrained
1 clove garlic, minced
1c egg noodles

Put all ingredients in pot. Heat until boiling. Reduce heat to simmer. Simmer for 30 minutes.

Beef Stew

2c left over roast, cut up
3 Potatoes, cut up
3 Carrots, sliced
1/2 Onion cut in wedges
12oz carbonated water
1pkg onion soup mix
1 can condensed mushroom soup


Place all ingredients in a dutch oven or any big pot. Cook on Medium heat for 30 minutes. Reduce to simmer for 1 hour or until carrots are tender.

Beef Roast

3lb beef roast
1/4c oil
Salt and pepper to taste

Heat oven to 425. Mix oil and salt and pepper rub on roast. Place roast in oven for 30 minutes. Decrease heat to 350 and cook for 1 hour 30 minutes. Let stand for 20 minutes

Left over chicken, BBQ chicken sandwiches

2c Cubed or shredded cooked chicken
3T Jelly, Jam, Marmalade
1/2-3/4c Prepared BBQ sauce

Mix all ingredients into a 2qt sauce pan. Heat stove to medium-low. Cook until heated through.

Honey baked chicken

Honey baked chicken

1 whole chicken cut up
1/2c honey
1/4c prepared mustard
1/4c butter

Heat oven to 350. Take skin off chicken and place in 11x13 baking pan. Mix remaining ingredients in a microwave safe dish (I put everything in a glass measuring cup) and microwave for 1 minute or until butter is melted. Pour over chicken. Bake for 1 hour - 1 hour 30 minutes or until chicken is cooked through.

Monday: Honey baked chicken, rice pilaf, broccoli and cauliflower
Tuesday: BBQ chicken sandwiches (using leftover baked chicken) mac and cheese, green beans
Wednesday: Fried catfish(caught by hubby), french fries, corn
Thursday : Beef roast, roasted potatoes, salad
Friday: Beef stew (using leftover beef roast), fresh bread
Saturday: Vegetable beef soup (using left over beef roast), garlic bread
Sunday: Left overs
